3-Ingredient Beer Dip

Found a quick and easy dip recipe on Facebook.

Pour a bottle of beer into a saucepan and simmer for 2-3 minutes. Add a cubed 8-oz package of cream cheese and stir until combined. Add an 8-oz package of shredded cheese and stir until combined. Optional: Garnish with sliced green onions.

I happen to have cream cheese and shredded cheese in the fridge, so I think I'll take a stab at this later this afternoon.  The recipe doesn't specify what type of shredded cheese to use;  I'm using sharp cheddar.  Instead of Corona I'll use one of my lighter homebrews.  I'll let you know how it turns out.

UPDATE:  I made the dip and it was pretty tasty.  As I mentioned above, the bag of shredded cheese I used was sharp cheddar.  The beer was a homebrewed cream ale.

The dip had a bit of a sour aftertaste, I wonder if that's why the original recipe calls for a bland macro beer.  I'll try making this with different beers and see which works best.

Another thing I discovered is that this dip is even better with soft pretzels than with chips.  I think the sweetness helps balance out the sourness of the beer.

All in all I give this recipe a thumbs up.  Let me know if you try it- what beer you use and how it turns out.
